Spicy Black Eyed Peas

Down south we have a tradition. It is eating Black eyed peas on New Years Day because it brings you good luck. Here is a healthy recipe for your good luck. Wishing you lots of luck in 2008.
 

Spicy Black-eyed Peas

4 slices turkey bacon or 4 slices of Center Cut Oscar Mayer Bacon
1 medium onion, chopped
1 (16-ounce) package dried black-eyed peas, washed
1 (12-ounce) can diced tomatoes and green chiles
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
3 cups water

 In a large saucepan, cook the bacon until crisp. Remove the bacon, crumble, and set aside to use as a topping for the peas. Saute the onion in the bacon drippings until tender. If you used turkey bacon saute the onion in light vegetable oil. Add the peas, diced tomatoes and green chiles, salt, chili powder, pepper and water. Cover and cook over medium heat for 45 minutes to 1 hour, or until the peas are tender. Add additional water, if necessary. Serve garnished with crumbled bacon.

My mother was a firm believer of 'black-eyed peas and fat back' every first day of every year. She raised all her kids to do the same. Needless to say, I sat down at lunch today to a big plate of black-eyed peas, fried salt-pork, mashed potatoes, and corn bread. It may be a killer for the colestoral, but I just gotta' do it!
